Classic Maple Recipees

 

Maple Granola

Mix well:
14 cups large slow oats
2 cups wheat germ
1 cup sunflower seeds
1 cup sesame seeds
2 cups unsweetened cocoanut
1 cup dark brown sugar

Add to the above:
¾ cup maple syrup
½ cup vegetable oil
½ teaspoon salt
1 teaspoon vanilla

Mix all very thoroughly. Spread thinly in pans, bake at 275 degrees to 300 degrees for about 20 minutes or until toasted. Watch for burning


 

Maple Glazed Squash

Cut 3 acorn squash in half lengthwise. Remove seeds. Bake cut side down on a shallow buttered pan at 350 degrees for 35 - 40 minutes, or until almost tender. Turn cut side and season with salt and pepper.

Fill cavities with 2 cups drained cooked small onions and ½ cup broken walnuts (optional). Melt cup butter or margarine, add cup maple syrup, ¼ teaspoon sale, ¼ teaspoon cinnamon. Spoon this sauce over squash and filling. Continue baking 15 to 20 minutes or until squash is tender.


Maple Baked Beans

1 quart white beans
½ cup chili sauce
1 cup maple syrup
1 teaspoon dry mustard
1 tablespoon salt
1 small onion diced
5 slices bacon

Partially cook the white beans. Place ½ the beans in pot or casserole. Add bacon then the rest of beans. Mix ½ the maple syrup with the rest of ingredients. Pour over beans and add boiling water to cover. Bake covered at 300 degrees for four hours. Add remaining maple syrup as liquid is needed.


 

Maple Pork Chops
"Sweet and Sour"

Brown 4 pork chops in a small amount of fat. Sprinkle with salt and pepper and place in a 2-quart casserole. Bring to a boil:
¾ cup tomato juice
¼ cup maple syrup
½ teaspoon dry mustard
¼ teaspoon ground cloves
1 tablespoon vinegar
small bay leaf

Pour sauce over chops, cover and bake at 350 degrees until chops are tender (1 to 1 ½ hours).

Serves 4


 

Maple Walnut Squash

Medium Squash - Cubed, Cooked & Mashed

Add:
3 Tbsp Butter
3 Tbsp Maple Syrup
¼ tsp Salt
¼ tsp Pepper
¼ tsp Nutmeg
¼ cup Toasted Walnuts

Blend all ingredients except walnuts into prepared squash. Place in serving dish and decorate with walnuts.
OR
Refrigerate prepared squash up to 2 days. Bake covered in a 400 degree Fahrenheit oven for 25 minutes. Garnish with walnuts and bake for 10 minutes uncovered.


 

Maple Chicken

2 ½ lbs. Chicken pieces
½ cup Maple Syrup
½ tsp Grated lemon rind
¼ cup Chopped almonds
Pinch Pepper
2tsp Lemon Juice

Remove skin from chicken pieces. Place chicken pieces in shallow 3 L (9" x 13") pa. Mix remaining ingredients and pour over chicken. Bake uncovered for 50 min at 400 degrees, basting occasionally.

Serves 4-6


 

Maple Meatloaf

1 lb. Lean ground beef
1 Onion, chopped
1/3 cup Milk
1 Egg
½ cup Dry bread crumbs
½ tsp Salt
1 Clove garlic, minced
Pinch Pepper
¼ tsp Worcestershire sauce
¼ tsp Soya Sauce

Sauce:
¼ cup Chili sauce or ketchup
¼ cup Water
1/3 cup Maple Syrup
½ tsp Prepared mustard

Combine meatloaf ingredients in a large bowl. Place in a 1.5 L (9" x 5" x 3") loaf pan. Microwave at medium-high power (70%) for 5 min. Drain excess fat from meatloaf.

Combine chili sauce, water, maple syrup and mustard. Pour sauce over meatloaf and microwave, uncovered at medium-high power (70%) for 8 to 10 min, or until no longer pink. Let stand for 5 to 10 min. to complete cooking.

Serves 6


 

Sweet Maple Carrots


1 1/2 pounds carrots, peeled, cut into 1/2-inch-thick rounds
1/3 cup water
3 tablespoons unsalted butter
2 tablespoons pure maple syrup
1 tablespoon dark brown sugar


Bring all ingredients to boil in heavy large skillet. Reduce heat to medium; cover and simmer until carrots are crisp-tender, about 8 minutes. Uncover; cook until juices are reduced to glaze, about 5 minutes. Season with salt and pepper.

Serves 6


 

Maple Chicken with Sausages

1/2 cup all-purpose flour
1 tsp salt
1/4 tsp pepper
4-1/2 lb chicken pieces
1 LB small sausages
1 Spanish onion, sliced
1 tbsp vegetable oil
1/2 cup maple syrup

In shallow dish, combine flour, salt and pepper
Dredge chicken in mixture and set aside
Heat large skillet over medium-high heat
Cook sausages for about 3 minutes or until lightly browned but not cooked completely
Remove and set aside
Separate onion into rings and add to skillet along with 3 tbsp water
Cook for 5 minutes or until golden
Remove and set aside
Add oil to skillet, brown chicken, in batches, for about 5 minutes per side
Arrange in single layer in large roasting pan, top with sausages and onion
Drain fat from skillet, pour in 1/2 cup of water, stirring to scrape up brown bits from bottom of pan
Stir in maple syrup, pour over chicken
Bake, uncovered, in 350 F oven, basting occasional, for 45 minutes or until tender and juices run clear when chicken is pierced
Skin fat from sauce, pass sauce separately

Serves 8 - 10
